Our annual Valentine's offering, the Annabel Lee pays homage to Edgar Allen Poe and his love that made angels envious. It's a tale of love and loss and one of Poe's most beloved, if not most beloved, poems.
For this year's offering, we've selected a wonderful small-batch, single-origin coffee from Riseralda, Colombia utilizing the Tabi Castillo arabica varietal.
Hand selected during the harvest, the pickers pull only ripe and overripe cherries in a 85% to 15% ratio. The coffee is then left to pre-ferment for 24-30 hours before being pulped (separating the beans from the hull). After pulping, the coffee is left to dry for 36 to 40 hours before being fully washed in water. To dry, the coffee is placed in solar tunnels for twelve hours and then placed in mechanical dryers where they are dried for up to 9 days at 98 degrees Fahrenheit.
For the Annabel Lee, we roast it deeper than our usual single-origin for greater caramelization that results in a deeper, more thoughtful coffee with smooth, round body, low acidity and flavor notes of dark chocolate and deep red bing cherries.
