In March 2017, Zee and I were sitting at a cafe in Manila discussing their coffee production from that year when she casually mentioned that the coffees that weren't of export quality were kept by the tribal farmers who took that coffee, pulped it and then placed it in the river overnight to wash the mucilage away.

What was that??? In the river??? Huh???

After clarifying I decided that we needed to give it a try and we agreed that for 2018, we would do this river washed coffee together, as our special project.

While the species of coffee in Miarayon is arabica, the coffee has undergone natural introgression into a range of varieties, with most of them not having been genetically identified. The basic variety is typica and the Talaan-dig farmers have been producing and harvesting this coffee for generations under extreme conditions.

From the farms at elevation, it's a minimum two-hour hike back to the nearest roadway. The only access to the farms and the community is on foot, meaning that the coffee is humped down the mountain by people. From there, the harvested coffee can be taken by truck to a mill for processing.

For the Hinunauan, we've bypassed the common method of processing the coffee for something a little different. Typically, pulped coffee is placed in water tanks to ferment overnight removing the layer of mucilage before being dried. Instead, our farmers are taking the pulped coffee and placing them inside hand-woven rattan baskets (known as "ambong" in their language) that are then floated in the river overnight. It is the gentle flow of the river, the circulation of the beans and the rubbing of the rattan basket that removes the mucilage layer and processes the coffee.

The man in the photo is Rito, a member of the Talaan-dig tribe. He is now 75 years old and is one of the few people left who know the art of rattan weaving. Like many indigenous places in the world, there are very few people who are willing to learn the old tribal arts.

The Talaan-dig people (meaning "People of the Slope") live on 11,000 acres of ancestral land on the slope of Mount Kalatungan in Bukidnon, Mindanao. While the peopl ehave their homes in the center of the community, most of their coffee is planter further up the mountain, starting at 1,700 meters. 

The Hinunauan is one of our Special Reserve Coffees and comes in a collectible tin featuring Rito our basket weaver. The Hinunauan is a lovely balanced coffee with medium brightness, round medium body and light tropical notes and a juicy finish.
